Chiapas is the largest coffee producing state in Mexico and probably also the best known, especially outside Mexico. Our coffee from Chiapas is grown by Tzetzal and Tzotzil communities: descendants of the Mayas that once lived in the area of the towns Pantelhó, Tenejapa, San Juan Cancuc, Chilón and Sitalá. The 100% Arabica coffee grows on volcanic soil in the shadow of indigenous trees. The trees lower the intense sunlight and contribute the the nutrients necessary for the coffee plants. The trees also soften the rainfall thus preventing fertile soil to be washed away. Neither artificial fertilizer nor chemicals are used during cultivation, harvest and processing of this coffee. The coffee is harvested by hand in the period from December to February.
